Wow, hats off! There really is a mistake!
For anyone else, it is not a real UDP header, but hex ASCII saying:
BUY SUM APP/ES
If third last byte was 4C instead 5C it would be “APPLES”. Too fitting for UDP joke to not be intentional.
On the other hand, the T hex says
1 pear, please.
