Pinkie Sense had the first main episode with Twilight turning into a fiery oven, and when she used it to help rescue construction workers.
With Future Twilight, her twitchy tail predicted a potted plant falling on Twilight’s head when she was trying to figure out what to [not] worry about the future.
She also used it to dodge a massive plant vine in the first part of Princess Twilight Sparkle; as she ducked the vine smashed into Rarity instead.

Now that you mention it, it was seen mostly only in 2 episodes of the over 200 that we got. It is kinda weird that it didn’t appeared that much
