It’s possible that it’s just Opaline never seeing the transformation part. But then why are regular alicorns not present in the tapestry despite their importance? Why have all the alicorns we’ve seen prior, even the ascended ones, been regular? And if this art implies Sunny’s mom also can transform to/from alicorn mode…

Rarity wasn’t an alicorn as getting wings didn’t increase her base magic. Cozy was an alicorn because she got a magic boost, the difference is it wasn’t earned like Twilight/Sunny (hence Cozy reverting to normal once her powers were nullified, but “true” alicorns remained such that that even their magic was stolen or nullified it came back after such was undone while “false” alicorns stayed depowered.

So is Cozy Glow an alicorn even though she wasn’t in that form when she was turned to stone? Was Rarity an alicorn when she had butterfly wings?

Check the episode or its transcript again: what was new to Opaline was Sunny being able to switch her wings+horn on and off. Opaline further expresses surprise that, given the choice to switch her “alicorn mode” on and off, Sunny doesn’t choose to remain an alicorn all the time.
She has seen other “ethereal” alicorns like Sunny before (her own Skyros tapestry, below - that prominently features the Starscout Crest - depicts five of them) but the implication is that their wings and horn were as permanent as anyone’s, just made of magic rather than flesh and bone. There’s no continuity error here.

That’s the thing, wouldn’t Pinkie be an Alicorn then? If considering enough chaos magic turned her into one? Sunny and mom are always and will be, earth pony first.

Perhaps she was just surprised that a regular pony became that kind of alicorn instead of one with physical wings and a horn like is seen with Twilight and Cadence

Opaline, despite coming from Skyros, considered the magic wings/horns alicorn a new development, not that TYT hasn’t had such continuity errors with MYM.

Opaline’s still an alicorn, why would she not be considered one? What seems to be the case based on the tapestry in The Lone Alicorn, is that there’s 2 types of natural born alicorns, ones with physical wings and horns and ones with magical wings and horns.
Alicorn All Along! Yeah, my gripe here is that by that logic isn’t Opaline just a Pegaunicorn? Her wings don’t disappear even if she did yes? Is being Alicorn a sub-species or title now?
